Place pasta, tomatoes, onion, garlic, basil in a large pot. Pour in the vegetable both, sprinkle pepper flakes and oregano on top. Drizzle top with olive oil.
Cover pot bring to a boil, then reduce to low simmer (keeping covered)and cook for about 10 minutes, stirring every 2 minutes. Continue till liquid is mostly evaporated (you can leave some).
Season with salt and pepper, stirring to distribute any remaining liquid. Serve garnished with parmesan. |
