Summer Party Finale

4 plum tomatoes
Vegetable oil
1 to 2 canned chipotle chiles and 1 to 2 Tblsp adobo sauce
1/2 medium onion chopped
3 Tblsp minced cilantro
2 Tblsp tomato paste
1 Tblsp white vinegar
2 cloves garlic minced
2 tsp dried oregano
1/2 tsp salt
Pinch or two of sugar (optional)


Bring smoker to temperature (I like to do these low and slow, so 200 pellet slightly higher on electric)
Coat tomatoes with oil and smoke until the skin splits and the tomatoes are well softened' (generally about 1 1/2 to 2/12 hours depending on temp)

Transfer tomatoes unskinneed and uncored to a blender and add the other ingredients except for the sugar. Pure the salsa. Pour the salsa into a bowl and refridgerate for at least 30 minutes. Add sugar if needed
