2 cups diced Focaccia
1/4 cup olive tapenade
3 Tbsp apple cider vinegar
6 cups chopped romaine lettuce
1/4 cup cubed turkey breast
1/4 cup cubed salami
6 oz provolone cubed or shredded
2 medium tomatoes chopped
1/2 cup pitted green and black olives, roughly chopped
1/2 cup sliced pepperoncini peppers
olive oil as needed
Kosher salt and freshly ground pepper to taste

Preheat oven to 350. Arrange bread in a layer on a baking sheet. Drizzle with olive oil, salt and pepper and toss to combine. Place in oven and cook, stirring occasionally till toasted and lighty browned (15-20 minutes).

In a bowl combine tapenade, vengar, whisk together. Taste, add salt if necessary.

In a large bowl add lettuce, turkey, salami, cheese, tomatoes, olives and pepperoncini. Gently toss to combine, dress with the dressing and toss again. Top with croutons.
