Salads


For catfish
1 lb catfish filets
1 Tbsp olive oil
2 Tbsp cajun spice
1/4 tsp kosher salt

Salad
1/2 cup low fat buttermilk
2 Tbsp low fat mayonnaise
1 Tbsp cider apple vinegar
2 tsp cajun spice
4 cups mixed greens
2 cups sliced red cabbage
2 tomatoes diced
2 roasted red peppers sliced
3 Tbsp chopped pecans

Catish, preheat oven to 400. Cut the fish into 1 inch strips. In a bowl add the fish, oil, cajun spice and salt. Throughy coat the fish.
Place the fish on a foil lined baking sheet, place in oven for 10-12 minutes.

Salad
In a small bowl add buttermilk, mayonnaise, vinegar and cajun spice. Whisk to combine and reserve. In a large bowl, add greens, cabbage, tomatoes, red peppers and pecans. Tos to combine, add dressing and toss again to combine. Divide and top with catfish strips.
