12 oz tubular pasta
4 boneless breasts cut in thin strips
3/4 lb sweet/hot sausage removed from casing
1 med red bell pepper cut in thin strips
1 med green pepper cut in thin strips
1 med onion quartered and sliced
2 lg tomatoes
1 garlic clove minced
3 Tbsp fresh basil
3 Tbsp dry white whine
1/2 tsp salt
1/4 tsp pepper
Cook pasta 10 minutes, drain and set on serving platter and keep warm. In skillet cook sausage and chicken over medium heat, stirring until sausage is browned and cooked through. Drain off fat. Add pepper and onions to skillet. Increase heat to high and cook till peppers are crisp tender, 3-5 minutes. Stir in tomatoes, garlic, basil, wine, salt and pepper. Reduce heat to medium. Cook 2-3 minutes until hot. Serve sauce over penne.
This was OK, but a little bland. We will work on improving it and repost the recipe!!
