5 lbs Hi-Gluten Flour
2 Tbsp Dry Yeast (SAF)
2 Tbsp + 2 tsp salt
1 1/2 qt Lukewarm Water (100-110)
1/4 cup honey
1 cup Olive Oil
2/3 cup sage chopped
3/4 cup Monterey Jack grated

1. Add Flour, yeast, cheese, sage, salt in a mixing bowl. Blend lightly (mixer on #1).
2. Slowly blend in water, oil and honey while on low speed.
Blend at medium speed for 1 1/2 minutes until dough ball begins to form.
3. Switch mixer back to low and blend for 5 more minutes.
4. Add aditional flour until the dough becomes soft and velvety to touch.
5.Remove dough, cover and let rised for 1 1/2 hours or until doubled in size.
6. Punch down and portion into 15 oz balls, wrap individually.
7. Place on tray and cover. Refrigerate if not immediately using.
8. Bake in preheated 375 oven for 12-14 minutes.
