1 cup bulgur
2 cups boiling water
olive oil (about 1/4 cup)
lemon juice (1/4-1/2 cup)
1 bunch chopped fresh mint
1.5 bunches minced fresh parsley
2 garlic pieces
2 lemons zested
1 tomato seeeded but leaving core
1 cucumber peeled and seeded
2 green onions
salt and pepper to taste

In a med size bowl, pour boing water over bulgur. Set aside for 30 minutes.

Food Processor: Mint, parsley, garlic

In a large bowl squeeze out water from bulgur, chop tomato, cucumber then add lemon zest and parsley mixture.

Add olive oil, lemon juice, salt and pepper to taste
