Pork shoulder 80%, beef (80/20) 20%
Per 5 pounds
1 tea pink salt
7 tea kosher salt
1 table sugar
1 table garlic powder
1 table pepper
1/2 table onion powder
2 1/2 tea mustard powder
1 cup non fat milk powder
2 cups ice water

Grind meat
Mix all spices in the water and pour over, mix well
Stuff or make loaves
Smoke at 165 until 152 internal
You can smoke loaves at 190 until 165 internal
Ice bath and let dry
