2 red onions
4 jalapeƱos up thin and put them in a big bowl.
Water,
White Vinegar
3 TBS salt
3-4 TBS sugar (to taste)
Garlic cloves (too taste)
Rosemary stems
Thinly slice onions jalapeƱos and put them in a big bowl. Boil water separately once it comes to a boil pour it in the bowl and soak everything for about 1 1/2 or 2 minutes then drain the water. Put them in jars and mix up 1 1/2 cups white vinegar (any vinegar will work) and 1 1/2 cups water. For a bigger portion or less just match water to vinegar. Toss in 3 tbs of salt 3-4 tbs of sugar (depending how sweet you want it) bring that to a simmer and stir. Crush a few garlic cloves and put them in each jar along with a stem of rosemary. Pour the vinegar brine into each can let it come to room temperature then stick in the fridge for at least 12-16 hours and enjoy!!! Super easy whole thing takes less then a hour
