Sandwiches


2 TBSP red wine vinegar
2 TBSP olive oil
Salt/Pepper to taste
Slaw package or make your own
5 sprigs Parsley chopped

Small Pork Tenderloin
hot dogs or chorizo
2 shallots chopped
1 garlic clove chopped
1/2 cup of chicken stock
3 TBSP cream
1 TBSP crushed peppercorn
1 tsp Worcestershire

Pitas

Combine the oil/vinegar salt and pepper. Pour over the slaw and top with chopped parsley.

Using oven
In a hot pan, brown the tenderloin on all sides. place in 400 degree preheated oven and cook for 15 minutes until tenderloin reaches 160. Put pan back on stove and remove the tenderloin, Brown hot dogs/chorizo in the rendered juice. Remove the dogs, add a pad of butter and brown the garlic/shallot. Add the chicken stock and simmer for a minute, add the cream, peppercorns and Worcestershire. Allow sauce to simmer and thicken. Slice the tenderloin on a bias.
Assemble sandwich. warm the pita and layer pork slices, top with dog/chorizo, slaw and a drizzle of the sauce. Enjoy!
