1/4 cup vegetable oil
1 medium onion, chopped
7 ounces bacon
4 cloves garlic minced
1 tablespoon garlic salt
5 eggs
18 ounces cooked pinto beans
7 ounces yucca flour or toasted Manioc/cassava flour (optional)
* parsley to taste

Put oil in a pan and fry the onions until transparent. Add the bacon and heat until cooked through.

Add garlic, salt and eggs, mixing carefully to scramble into large chunks.

Mix in the beans until incorporated. Reduce heat and gradually stir in the manioc/yucca flour (if using) and parsley. Serve warm
