hoagie rolls
4 lb rib eye or eye roast (rib eye can be pricy, eye roast is very tender and a good substitute)
2 onions - sliced thin
2 peppers - sliced thin
1 lb mushrooms (sliced)
butter
white wine

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk
8 ounces smoked provolone cheese, shredded or torn
� teaspoon kosher salt
� teaspoon fresh ground black pepper

1) slice the steak very thin (it may help to freeze it)
2) salt and pepper the steak and store it in a bag at least 2 hours
3) saut� the sliced mushrooms if using in butter and olive oil until cooked down. Add Salt/pepper, and use white wine to deglaze and flavor. Set aside
4) melt butter and cook onions on low till carmelized 30-40 minutes. Add peppers and continue cooking till softened. Set aside
5) In a medium saucepan over medium-low heat, melt butter. Add flour and whisk; allow flour to cook for 2-3 minutes to cook out the �floury� taste. Add milk, salt and pepper. Stir to combine. Add cheese and stir constantly until you have a smooth mixture. Reduce heat to low, until ready to serve, stirring occasionally.

8) in a frying pan, heat oil and butter, take meat (be sure to unfold slices) and place in pan. They will cook very quickly <1 minute a side.
9) place meat on roll, top with peppers/onions, mushrooms and then pour on the cheese sauce.
