8 cups chicken broth
left over pork carnitas (4 cups or more)
medium onion - diced
juice of 2 limes
3 garlic clove (more to taste)
1 bunch of cilantro
1-2 cans of black beans
1-2 cans sweet corn
1 TBL Cumin (or more to taste)
3 or so chipotle chilies in adobo sauce - chopped
salt to taste

Top with chopped tomato/avocado/cheese/sour cream.

Combine chicken broth and onions, bring to a boil, add all other ingredients. Add a bit of the adobo sauce as well.

Cook for about 15 minutes. Taste, if you want it spicier add some additional chopped chipotles/sauce, and simmer another 5 mnutes.

Dinner is DONE!
