Combine the syrup and soy. Marinade the steelhead with 1/2 of the liquid mixture. Set aside for 15 minutes. While marinading, heat the remain liquid and add the horseradish, thicken a bit. Oil the grill and place on indirect heat/low grill skin side down, and sprinkle with pepper. Grill about 8-10 minutes, baste with the sauce and grill another 5 minutes. Check for doneness (should flake and pull away from the skin). Serve with the remaining sauce. |
