6 large potatoes, baked
1⁄2 cup butter
1⁄2 cup sour cream
1⁄4 cup half & half
1 teaspoon salt
6 ounces Velveeta cheese, cut in strips
6 ounces cheddar cheese Cut in strips
Dash white pepper


While potatoes are hot, cut in half. Using a spoon, carefully scoop out centers into a large mixing bowl, making sure to leave enough of potato shell to be able to refill it later.

Mash potatoes, till smooth and lump free. Add butter, sour cream, half & half, salt and pepper. Spoon just a little into each potato skin.

Place one strip of Velveeta and one strip of cheddar cheese, making a criss-cross shape. Spoon a little more potato on top, add both cheeses again till potato is peaked, finishing with the criss-cross of cheeses on top.

Place potatoes in a large baking dish or pan, making sure potatoes stay in upright position.

Set oven to broil and return to oven for just a few minutes, just long enough to brown tops of potatoes
