In a small bowl add the dressing ingredienets and whisk to combine.
To make the salad, bring a medium pot of water to boil, once boiling add the rice, cook for 10 minutes, then add sun dried tomatoes into the water, cook 5 more minutes, drain into a colander and rinse to cool.
Add mixture to bowl, add kidney beans, peppers, ham, scallions and celery. Stir to combine and add the dressing, tossing again to mix thoroughly. Serve at room temperature. |
