Dressing
2 tsp orange zest
2 Tbsp fresh squeezed orange juice
1/2 tsp dried thyme
1/4 tsp cayenne
1/4 tsp kosher salt
1/4 cup olive oil

Salad
1/4 cup white rice
1/2 cup sliced sundried tomatoes
1 can (15 1/2 oz) kidney beans drained and rinsed
1 cubanelle chile pepper (or other pepper)
1 red bell pepper chopped
1/2 cup chopped ham
2 scallions chopped
2 celery stalks, finely chopped

In a small bowl add the dressing ingredienets and whisk to combine.

To make the salad, bring a medium pot of water to boil, once boiling add the rice, cook for 10 minutes, then add sun dried tomatoes into the water, cook 5 more minutes, drain into a colander and rinse to cool.

Add mixture to bowl, add kidney beans, peppers, ham, scallions and celery. Stir to combine and add the dressing, tossing again to mix thoroughly. Serve at room temperature.
